Summer nights mean grilling out and barbecue dinners for so many. I don’t have a grill since the City of Dallas will not let me have my own and I consider grilling as more of a ‘guy thing,’ so I make my Hollyized version of summer BBQ at home on my Viking range! Tonight’s giddy Uptown Cattle Drive means dinner on this Princess Palace Ranch will be BBQ bison tacos with some chilled avocado! (Bison is a very lean red meat so you can keep your swimsuit abs, still indulge a tad and it doesn’t really have a ‘game’ taste to it.)

Need:
.3 pounds ground bison
.25 bottle BBQ sauce (I use Stubb’s Pecan Honey to remind me of Austin)
.25 avocado (slightly chilled)
Pepper
Whole wheat tortilla
Mixed green lettuce

Hollyized Steps:

Spray some EVOO on pan and add the bison from your butcher paper. You may have to use a spatula to break it up from a large clump. Then top it off with your sweet flavored BBQ sauce- the sweet flavor will compliment the avocados. Add some freshly grated pepper for a kick.

Cover and continue cooking on medium heat for about seven minutes. Uncover and move the meat around so that it cooks thoroughly every couple of minutes.

Slice up the avocado into strips while the bison is cooking.

Now, it’s time to start building your taco! Warm a whole wheat tortilla in the microwave for about 20 seconds, then add the bison and top with the avocado. You can also add mixed greens to add some crunch- mine went bad and so I had to throw it out. I basically just lead you through a refined version of Sloppy Joes, but hey, it’s summer and time to reminisce on your childhood and have an excuse to get dirty! I’m the new Cowgirl in town! 🙂
