Spray some EVOO on pan and add the bison from your butcher paper. You may have to use a spatula to break it up from a large clump. Then top it off with your sweet flavored BBQ sauce- the sweet flavor will compliment the avocados. Add some freshly grated pepper for a kick.
Cover and continue cooking on medium heat for about seven minutes. Uncover and move the meat around so that it cooks thoroughly every couple of minutes.
Slice up the avocado into strips while the bison is cooking.
Now, it’s time to start building your taco! Warm a whole wheat tortilla in the microwave for about 20 seconds, then add the bison and top with the avocado. You can also add mixed greens to add some crunch- mine went bad and so I had to throw it out. I basically just lead you through a refined version of Sloppy Joes, but hey, it’s summer and time to reminisce on your childhood and have an excuse to get dirty! I’m the new Cowgirl in town!
