If you are like me, you enjoy vacationing in places like Vegas for the great food — especially the steak! Even at home I love a good sirloin steak for dinner at least once a week. Before you jump the gun and think, “WOAH. Holly is quite the high roller!” Think again. (Well, I AM a high roller! :-P) You can get a great center cut sirloin fillet for about $8 a pound at the grocery store — that’s a little less than what a pound of shrimp goes for now.

The only hassle of steak is that you have to plan for it, you can’t crave it and have it for dinner if you make it yourself. The key is overnight marinade AND cooking in a cast iron skillet! There are several marinades on the market that cater to your specific preferences or you can simply make your own, if you wish!

If you can’t make it to Vegas, here’s how you can eat fabulously without high stakes gambling!

Need:
2 grassfed sirloin filets
1 bottle of steak marinade
Oven to 500 degrees

Hollyized Steps:

Marinade your steak overnight in a Ziplock bag to seal in the moisture and avoid spilling. Remove the steak about an hour before cook time so that it can adjust to room temperature. (It may take longer to sit out if your fridge has a cooler setting.)

Next, heat your oven to 500 degrees and let your empty cast iron skillet bake for about 20-30 minutes. (You’ll want it nice and HOT!)

Remove the skillet from the oven and place on your stove top on high heat. Then cook the steaks on each side for about 2-3 minutes each. Pour the remaining marinade over the steaks.


Place back in the oven for about 12-15 minutes for medium-well.

Serve with a lighter side dish like salad and you will feel like you are a high roller dining in Vegas! 🙂
