Kiss me, this cook is (part) Irish! Happy St. Patty’s Day to you all! If you haven’t already made yourself sleepy sipping beer o’green, then let me show you how to make an easy lentil soup full of greens! (Okay, I admit you can’t evenly compare alcohol and veggies, but just use your imagination.) Even if you aren’t Irish, this lentil soup only requires one pot! If you are like me and can’t stand doing dishes, you’ll consider this dish gold! 🙂

Need:
3 tablespoons EVOO
2 Containers vegetable broth
2 Cups lentil beans
.5 Onion
1 Bag fresh spinach
1 Bunch fresh kale
1 Zucchini
1 Container mushrooms
2-3 tablespoons Pepper
1 tablespoon Cayenne pepper

Hollyized Steps:

First, chop all your veggies — onion, mushrooms, kale and zucchini. This will make everything go much faster and leaves some time for an Irish jig!

Next, heat a soup pot on medium heat. Coat the bottom of the pan with the EVOO and add in the onions. Coat the onions with the oil and cook for approximately 4 minutes.


Then add all the veggies, vegetable stock and lentil beans into the pot o’ gold.





Add in your spices and then cover on medium heat. Once the soup begins to boil, simmer on low for approximately one hour.

Serve with a glass of your favorite chilled green beverage and you’re done! Feel like you’ve now found your pot o’ gold at the end of the rainbow!?! I do. 🙂
