It is finally get chilly in Texas, which officially marks the start of the holiday season! Yes, my Christmas decorations are up, and the non-stop Christmas music radio station launched this weekend! One of my favorite holiday traditions is baking from scratch. There’s something about using seasonal spices and having the aroma of baked goods consume your kitchen — it just makes home feel extra cozy!

I had some ripe bananas leftover from my smoothie stash this week, so it was the perfect excuse to start baking! I made my “famous” chocolate chip banana bread, which is a slightly healthy spin on regular banana bread, but also satisfying to your sweet tooth. It is SO good that even Mr. S loves it! Plus, your mixer does all the hard work, so it is really is to make!

Need:
3 ripe bananas
1 cup oat flour (you can find this in the bulk section at Whole Foods)
.75 cups raw sugar
1 egg
.75-1 cup dark chocolate chips (I like lots of chocolate in my bread, but use an amount to your liking)
1 tablespoon pumpkin pie spices (yes, that is what it is called! This adds a little ‘zing’ flavor to the bread.)
1 tablespoon vanilla extract
1 tablespoon melted Earth Balance butter
.75 teaspoon baking powder
.5 teaspoon baking soda
Preheat oven to 350 degrees

Gather all your ingredients.

 

Then the easy part: throw everything into your mixer! Using your flat beater, mix it up! There will be a little “bumpy” noise from the chocolate chips. Just keep an eye on it, and slow down the speed, or stop if you think it is too noisy.

Next, spray your loaf pan with a little EVOO to prevent any sticking. Pour your banana bread mixture into the loaf pan, and loosely cover it with foil for about 30 minutes. This helps keep the moisture in your bread. After 30 minutes, quickly take the loaf out of the oven, remove the foil, and bake for another 15 minutes.

Then pull it out of the oven, and you’re all set! (I told you it was easy!) Enjoy this healthy spin on chocolate chip banana bread! It makes for a great lazy Sunday morning breakfast paired with a cup of coffee, or sweet treat after dinner.
