Preheat oven to 350 degrees
Gather all your ingredients.
Then the easy part: throw everything into your mixer! Using your flat beater, mix it up!
There will be a little “bumpy” noise from the chocolate chips. Just keep an eye on it, and slow down the speed, or stop if you think it is too noisy.
Next, spray your loaf pan with a little EVOO to prevent any sticking. Pour your banana bread mixture into the loaf pan, and loosely cover it with foil for about 30 minutes. This helps keep the moisture in your bread. After 30 minutes, quickly take the loaf out of the oven, remove the foil, and bake for another 15 minutes.
Then pull it out of the oven, and you’re all set! (I told you it was easy!) Enjoy this healthy spin on chocolate chip banana bread! It makes for a great lazy Sunday morning breakfast paired with a cup of coffee, or sweet treat after dinner.
