I hereby declare that the National Hollyday on Wednesdays will be… Wrinkle-free Wednesdays! I’ll show how to make delicious dishes that look complicated but can save you stress (and wrinkles!) with some shortcuts.

My first wrinkle-free dish is summer inspired to kick-off June: chicken salad wraps! It’s perfect for a poolside lunch or a fun and chilled meal. The original recipe was adapted from The Barefoot Contessa’s At Home cookbook but I Hollyized it to make it more summery, of course!

Need:
2 chilled grilled chicken breasts (from a summer cookout)
2 large celery stalks
Green and red grapes (enough to make about 1.5 cups when chopped)
2 tablespoons light mayo
Pepper
1 whole wheat tortilla
Mixed greens

Hollyized Steps:

First, make sure your chicken breasts are chilled after grilling. This may take a couple of hours in the fridge. Then chop into small cubes- you can make it as chunky as your heart desires. Chop the celery into thin slices as well. Set both aside in a mixing bowl.

Wash your grapes! Slice each grape into a thin slices (about 4) and then again in half. The more grapes you slice, the sweeter your salad will be!

Add the grapes, mayo and fresh pepper to the bowl with the chicken and celery and mix together.

Heat the tortilla for 10 seconds in the microwave so that it’s flexible but still cool, then line with mixed greens. Serve the chicken salad on the bed of mixed greens and you are all set! This tastes fabulous, is low in fat AND stress! You can put the botox off for at least another week! ๐Ÿ™‚
