Ingredients

  • 1.5 cups unsweetened coconut milk
  • 1 cup water
  • 2 tbsp Earth Balance vegan butter
  • 1.25 cups white Basmati rice
  • Cumin
  • 1 can black beans
  • 1 container pineapple mango salsa (found in the fresh fruit section of Whole Foods)
  • Unsweetened coconut

Hollyized Steps:

  • The most labor intensive portion of this dinner is making the rice, so here goes! Add the coconut milk, water and Earth Balance to a soup pot and let boil.
  • Once the liquids are boiling, measure out and add in the rice.
  • Once the mixture starts boiling, cover and simmer on low for approximately 15 minutes. Every now and then, you will have to use a fork and stir it for a second and then re-cover.
  • Once the rice has fully absorbed all the liquid, it’s ready! Serve in a bowl, sprinkle with a tad of unsweetened coconut, then top with black beans and a couple of shakes of cumin. Finally spoon as much of the pineapple mango salsa as your little heart desires and you are done! After a stressful day, this is the perfect dinner to enjoy by the pool and simmer down!
