The most labor intensive portion of this dinner is making the rice, so here goes! Add the coconut milk, water and Earth Balance to a soup pot and let boil.
Once the liquids are boiling, measure out and add in the rice.
Once the mixture starts boiling, cover and simmer on low for approximately 15 minutes. Every now and then, you will have to use a fork and stir it for a second and then re-cover.
Once the rice has fully absorbed all the liquid, it’s ready! Serve in a bowl, sprinkle with a tad of unsweetened coconut, then top with black beans and a couple of shakes of cumin. Finally spoon as much of the pineapple mango salsa as your little heart desires and you are done! After a stressful day, this is the perfect dinner to enjoy by the pool and simmer down!
