Ingredients

  • Rotisserie chicken (cooked in the hot foods/deli section of the grocery store)
  • 1 avocado
  • 2 tbsp mango peach salsa (you can use any flavor but this makes it sweeter)
  • 2 whole wheat tortillas
  • Spring mix salad
  • Cheddar Monterrey Jack cheese (shredded)

Hollyized Steps:

  • Slice avocado in half and remove the pit. Use a spoon and scoop out the avocado into a small bowl.
  • Then add the two tablespoons of mango peach salsa to the bowl with avocado. Use a masher or spoon to soften avocado and mix with the salsa.
  • Take your rotisserie chicken and shred the meat you best enjoy eating- I only like white meat so I just use the breasts. Shred it into a bowl and heat in the microwave for 20 seconds, if previously purchased.
  • Simply heat the tortillas in the microwave for 30 seconds then plate. Fill tortillas with spring mix salad, chicken, avocado salsa and sprinkle with cheese. The quick Tex-Mex dinner that Speedy Gonzalez would also love is served! (P.S. Tricks aren’t just for kids!)
