Ingredients

  • 4 bananas
  • 1.5 cups oat flour
  • 2 tbsp baking powder
  • 1 pinch salt
  • 2 tbsp canola oil
  • 1.5 cups soy milk

Hollyized Steps:

  • Add all the dry ingredients: oat flour, baking powder and salt into a mixer.
  • Then add the canola oil, soy milk and bananas. Mix away! (First on the stir speed, then slowly increase the speed until the batter is liquid.)
  • Then unscrew the mixing bowl and snag your .25 measuring cup. Spray a pan with EVOO and heat on medium. Once the pan is heated, use the measuring cup to pour the batter in the pan.
  • Once the batter starts to bubble, flip those hot patty cakes! Then cook the other side for about three minutes or until golden brown.
  • Plate and serve with warm maple syrup! “Your Hot Patty Cakes of Champions are served, Lady Holly (your name here)!”

Notes

*Note: The most fabulous thing about this dish is that it is low maintenance (minimal dirty dishes) and quick to make!
