Ingredients

  • 3 cups shredded white cheddar cheese (about one block of cheese)
  • 2 cups shredded yellow sharp cheese
  • 1 cup blue cheese crumbles
  • 1 cup shredded parmesan cheese
  • 4 oz pimentos, drained (these come in a jar already diced)
  • 1 cup light mayo
  • 2 tbsp dijon mustard

Hollyized Steps:

  • First pull out your food processor and set-up the large bowl. (Trust me, there is A LOT of cheese in this!) Take all your ingredients, and throw them in your food processor. Keep pulsing until your mixture is smooth, but still has some texture.
  • Next cover your pimento cheese mixture with foil and pop it in the fridge for about an hour. This will help your pimento cheese mixture gel. (You can use the time to get in a quick gym session or scroll through Instagram!)
  • Finally, use a spatula to serve your pimento cheese on white or French bread with a glass of wine and salad for the perfect summer dinner. (I told you it was easy!) You can also fill the middle of celery sticks with your pimento cheese as a low carb option. Cheese lovers unite! Enjoy this tasty Southern classic on a summer night!
