Equipment

  • Foil
  • Cookie sheet

Ingredients

  • Marinade of choice
  • Fish/Chicken breast
  • Chopped veggies of choice
  • Fresh cracked pepper (if marinade is lemon juice)

Hollyized Steps:

  • Oven to 350 degrees
  • Pick your protein and a marinade. My go-to marinades are fresh squeezed lemon juice, a locally made raspberry chipotle sauce, and Stubb’s marinade (Austinite staple!), all found at Whole Foods!
  • Tear a piece of foil about the size of your cookie sheet, and lay it on top. Then, place your protein in the middle. Marinade and season your protein. (Pictured: lemon juice with cracked pepper on salmon) Then top with your chopped veggies. Wrap your foil taco style, and fold over, then roll up the ends, so no air can escape your healthy dinner pod. Set your foil wrapped pod on the cookie sheet and put in the oven.
  • Bake at 350 degrees for 25-35 minutes, and you are done! See, sometimes foiled dinner plans can end up being a fabulous thing! 🙂 (Please excuse the use of my Christmas dishes WAY past the holiday — I pulled out every little thing that made me smile as a sanity saver!)
