Line a thick cutting board with wax/parchment paper. Then stagger your four pieces of pork.
Season each side with salt and pepper.
Cover the pork pieces with another sheet of wax/parchment paper to help avoid making a mess. Make sure your meat tenderizer has the smooth side face-down. Begin to beat each pork chop with the tenderizer until it becomes fairly flat. Start on the outer edge and work your way out and around.
Spray a pan with EVOO and put on medium heat. Cook two pork chops at a time for about 3 minutes on each side.
Plate and serve family-style when hosting a guest for dinner. (The clean up is really is easy too!) Fresh pasta with sun-dried tomatoes and steamed veggies make excellent sides to compliment this light and tender meat. Enjoy!
