Happy Wrinkle-free Wednesday! To celebrate summer, today’s dish includes some fresh fruit and is easy for anyone to whip up and still impress! (Who needs to worry about more botox when they are worried about a blotchy/fading spray tan?) I channeled my inner Hippy (yes, this is vegan!), calmly cooking with my hair in a side braid and wearing pearls! πŸ™‚

Call the pool boy! It’s time to make coconut rice with black beans and pineapple mango salsa!

Need:
1.5 cups unsweetened coconut milk
1 cup water
2 tablespoons Earth Balance vegan butter
1.25 cups white Basmati rice
Cumin
1 can black beans
1 container pineapple mango salsa (found in the fresh fruit section of Whole Foods)
Unsweetened coconut

Hollyized Steps:

The most labor intensive portion of this dinner is making the rice, so here goes! Add the coconut milk, water and Earth Balance to a soup pot and let boil.

Once the liquids are boiling, measure out and add in the rice.

Once the mixture starts boiling, cover and simmer on low for approximately 15 minutes. Every now and then, you will have to use a fork and stir it for a second and then re-cover.

Once the rice has fully absorbed all the liquid, it’s ready! Serve in a bowl, sprinkle with a tad of unsweetened coconut, then top with black beans and a couple of shakes of cumin. Finally spoon as much of the pineapple mango salsa as your little heart desires and you are done! After a stressful day, this is the perfect dinner to enjoy by the pool and simmer down! πŸ™‚
