Breakfast/brunch is one of my most favorite meals of all time. I love making brunch plans with friends and I could eat breakfast foods ANYTIME!!! (When I lived in the sorority house, Breakfast for Dinner nights were among my favorites that the cooks made us. I ALWAYS attended dinner those nights!)
Pancakes or french toast take the cake on my top breakfast picks!!! (Nothing tops my college find: carrot cake french toast from South Congress Cafe!) Most of my love for breakfast and early morning dishes come from the fabulous memories associated with it. Everyone is always happy and fun-loving at breakfast- fresh for a new day and off to a great start.
When I was younger, during the summer months when there wasn’t any Sunday school, my family would go to evening mass. My Dad would let my mom sleep in on those mornings and make my sisters and I pancakes (all kinds!) and fresh squeezed orange juice. He would pretend to be our English waiter we called “Mushmont” and serve us speaking with an English accent on the fancy china. (Yes, my Dad is really fun and hilarious!) We LOVED it and lived for those Sunday mornings!
This Sunday my Junior League volunteering was canceled due to the snow (even though they didn’t tell us until we showed up) so I happily went home and made some fabulous vegan banana pancakes! (They were almost as fabulous as Mushmont’s!)
Need:
4 bananas
1.5 cups oat flour
2 tablespoons baking powder
1 pinch salt
2 tablespoons canola oil
1.5 cups soy milk
Hollyized Steps:
Add all the dry ingredients: oat flour, baking powder and salt into a mixer.
Then add the canola oil, soy milk and bananas. Mix away! (First on the stir speed, then slowly increase the speed until the batter is liquid.)
Then unscrew the mixing bowl and snag your .25 measuring cup. Spray a pan with EVOO and heat on medium. Once the pan is heated, use the measuring cup to pour the batter in the pan.
Once the batter starts to bubble, flip those hot patty cakes! Then cook the other side for about three minutes or until golden brown.
Plate and serve with warm maple syrup! “Your Hot Patty Cakes of Champions are served, Lady Holly (your name here)!”
*Note: The most fabulous thing about this dish is that it is low maintenance (minimal dirty dishes) and quick to make!
