easy stuffed bell peppers.

Costco recently opened in Dallas, so I have been getting some of my staple veggies in bulk. They have a lot of organic options, and the some of the same brands I trust at Whole Foods are available there at a lower price. We picked up a bag of bell peppers over the weekend and allocated some to spaghetti night (of course!) but still had a few more to use for the week.

I got creative and transformed our typical taco night into a Southwestern version of stuffed bell peppers! The fresh summer corn looked so good at Whole Foods, so into the dish they went! These stuffed bell peppers turned out SO good (Mr. S had seconds, so that is the ultimate stamp of approval!) and were easy to make after work. They’re also pretty healthy, which is always a bonus! You must try these!

Since I used my turkey taco recipe as a base for this dish, it yields a lot of stuffing that can be used in several bell peppers (8 halves) or gives you leftovers for tacos the next night. (I’m always looking for weeknight dinner shortcuts!) If you only want 4 bell pepper halves, just half all the stuffing ingredients listed.

Need:
1 pound ground turkey breast
3 green bell peppers
2 ears fresh corn
.5 diced onion
1 pack of spicy taco seasoning
shredded cheddar cheese
Oven to 350 degrees

Hollyized Steps:

First remove your corn husks and gather all your ingredients.

Remove the fresh corn kernels from the cobs and dice one bell pepper. Then sautée the onion and bell pepper in a pot.

Once the onions begin looking translucent, add in the ground turkey, taco seasoning and fresh corn. Cook in a pot until the turkey meat is fully cooked.

While your stuffing is cooking on the stove, begin prepping your bell pepper shells. Cut your bell peppers in half, and remove all the middle seeds. Place them in an 8×8 casserole dish. Then fill your bell pepper cups with the stuffing! Bake them in the oven for 15 minutes.

Finally, take your stuffed peppers out of the oven and top with shredded cheese. Put them back in the oven for another five minutes to melt the cheese.

Then serve your stuffed bell peppers with a side of salad, and enjoy your homemade healthy dinner! I find serving the stuffed peppers in a bowl makes it easier to eat. These really are simple to make, and cleanup is simple too!
