Back in April, Mr. S and I were very fortunate and got to attend The Masters, the golf equivalent of Wimbledon. We were excited to visit Augusta National, the most famous golf course in America, and see all of our favorite golfers. Most of all, we couldn’t wait to eat the food! (Seriously!)
The Masters is known for their pimento cheese sandwiches, and they certainly lived up to the hype!

We’ve been in a dinner rut lately (you can only have turkey tacos, sushi, and spaghetti so many times…), so I wanted to branch out and make a chilled summer dinner that would pair nicely with wine. We both LOVE LOVE cheese and haven’t had pimento cheese since Augusta… bingo! It was the perfect excuse to recreate a dish from a memorable trip as a way to relax during a hectic work week. (And eat more cheese.)
A little research led me to the Junior League of Augusta’s Par 3 Tea-Time at The Masters cookbook with the iconic recipe. It is a great pick for an easy dinner, especially after a long day at the office, or a book club/Bachelorette watching snack. Here are the steps to make yours:
Need:
3 cups shredded white cheddar cheese (about one block of cheese)
2 cups shredded yellow sharp cheese
1 cup blue cheese crumbles
1 cup shredded parmesean cheese
4 ounces of pimentos, drained (these come in a jar already diced)
1 cup light mayo
2 tablespoons dijon mustard
Hollyized Steps:
First pull out your food processor and set-up the large bowl. (Trust me, there is A LOT of cheese in this!) Take all your ingredients, and throw them in your food processor. Keep pulsing until your mixture is smooth, but still has some texture.
Next cover your pimento cheese mixture with foil and pop it in the fridge for about an hour. This will help your pimento cheese mixture gel. (You can use the time to get in a quick gym session or scroll through Instagram!)
Finally, use a spatula to serve your pimento cheese on white or French bread with a glass of wine and salad for the perfect summer dinner. (I told you it was easy!) You can also fill the middle of celery sticks with your pimento cheese as a low carb option. Cheese lovers unite! Enjoy this tasty Southern classic on a summer night!
