chop to it.

A recent gourmet dinner with my friend Miss K and a trip to my Williams-Sonoma inspired me to add another stamp in my poultry passport!

I hardly eat pork but an amazing pork tenderloin dinner made me want to learn how to make a new dish. (The best part about it is that it’s really easy and boy approved!) You will get to expand your culinary tools and get a meat tenderizer, if you don’t already have one. I got mine just to learn how to make this and the guy who worked there was SO helpful and showed me how to use this along with walking me through how to make pork chops (this dish) AND chicken Parmesan!

Need:
4 pork chops (fat trimmed/removed)
Salt
Pepper
EVOO
Parchment/Wax Paper
Meat Tenderizer (use flat side)

Hollyized Steps:
Line a thick cutting board with wax/parchment paper. Then stagger your four pieces of pork.

Season each side with salt and pepper.

Cover the pork pieces with another sheet of wax/parchment paper to help avoid making a mess. Make sure your meat tenderizer has the smooth side face-down. Begin to beat each pork chop with the tenderizer until it becomes fairly flat. Start on the outer edge and work your way out and around.

Spray a pan with EVOO and put on medium heat. Cook two pork chops at a time for about 3 minutes on each side.

Plate and serve family-style when hosting a guest for dinner. (The clean up is really is easy too!) Fresh pasta with sun-dried tomatoes and steamed veggies make excellent sides to compliment this light and tender meat. Enjoy! 🙂
