Happy Month of Love! After a whirlwind month and a half of working long hours and serving as co-chair for a big Junior League event, I’m finally able to catch my breath! I’m not going to lie: I was basically living on coffee, fumes… and occasional glasses of red wine.

I definitely didn’t cook much — the people working the salad line at my neighborhood market started to remember my order, which is scary because they serve about a gazillion salads a day! I decided to stop my grab-and-go dinner walk of shame and use my neglected kitchen for something other than making my morning lattes. The answer: foil baked fish/chicken and veggies!

I’m sure this is nothing new for most of you, but it was a complete game changer for me! I can make a healthy dinner, have it all ready at the same time, AND slip in a relaxing bubble bath while it bakes = WINNING! Pull out your combination formula, fellow Mathletes, because the dinner possibilities for this dish are about to get crazy infinite!

Need:
-Foil
-Cookie sheet
-Marinade of choice
-Fish/Chicken breast
-Chopped veggies of choice
-Fresh cracked pepper (if marinade is lemon juice)
-Oven to 350 degrees


Hollyized Steps:

Pick your protein and a marinade. My go-to marinades are fresh squeezed lemon juice, a locally made raspberry chipotle sauce, and Stubb’s marinade (Austinite staple!), all found at Whole Foods!

Tear a piece of foil about the size of your cookie sheet, and lay it on top. Then, place your protein in the middle. Marinade and season your protein. (Pictured: lemon juice with cracked pepper on salmon) Then top with your chopped veggies. Wrap your foil taco style, and fold over, then roll up the ends, so no air can escape your healthy dinner pod. Set your foil wrapped pod on the cookie sheet and put in the oven.

Bake at 350 degrees for 25-35 minutes, and you are done! See, sometimes foiled dinner plans can end up being a fabulous thing! 🙂  (Please excuse the use of my Christmas dishes WAY past the holiday — I pulled out every little thing that made me smile as a sanity saver!)
