After being snowed in for approximately 24 hours, I am officially going stir-crazy. My condo is spotless, I’ve ventured to the park across the street to take ground shots of the snow and ducks and have been cooking/baking! (I know, I am shocked too!)
I recycled the leftover brown rice from last night and made a tropical inspired lunch! So put on your tank tops and aprons and let’s go (eat some) fish!
Need:
1 salmon fillet
1/4 cup lemon juice
Grated pepper
1 tablespoon butter
Hollyized Steps:
Place salmon fillet in a pan sprayed with EVOO.
Cover fillet with lemon juice and grate pepper to your liking. Then cover and cook on medium-low heat for six minutes.
Then flip the fillet, add the tablespoon of butter to the top of the fresh side. Cover and put on low for five minutes.
Plate with brown rice and black beans. Feel like you’re in Kokomo yet?!
