Don’t worry, I haven’t gone all Fatal Attraction on anyone (nor do I plan to) and I’m not going to make rabbit. I’m going to share some fabulous tricks to celebrate Tex-Mex Tuesday with a quick dinner that doesn’t sacrifice on flavor! (And, no, I don’t quiero Taco Bell.) Here are my fabulous avocado salsa chicken tacos!
I’ve mastered several tricks in the past while I faked my way through “Hostess with the Mostess” but now I can actually put those pieces into play with some of my new skills to save time. Even the busiest of Holly’s can’t miss Tex-Mex Tuesday!
Need:
Rotisserie chicken (cooked in the hot foods/deli section of the grocery store)
1 avocado
2 tablespoons mango peach salsa (you can use any flavor but this makes it sweeter)
2 whole wheat tortillas
Spring mix salad
Cheddar Monterrey Jack cheese (shredded)
Hollyized Steps:
Slice avocado in half and remove the pit. Use a spoon and scoop out the avocado into a small bowl.
Then add the two tablespoons of mango peach salsa to the bowl with avocado. Use a masher or spoon to soften avocado and mix with the salsa.
Take your rotisserie chicken and shred the meat you best enjoy eating- I only like white meat so I just use the breasts. Shred it into a bowl and heat in the microwave for 20 seconds, if previously purchased.
Simply heat the tortillas in the microwave for 30 seconds then plate. Fill tortillas with spring mix salad, chicken, avocado salsa and sprinkle with cheese. The quick Tex-Mex dinner that Speedy Gonzalez would also love is served! (P.S. Tricks aren’t just for kids!)
