HAPPY GROUNDHOG DAY! It’s February and love is in the freezing air! For those of you groundhogs avoiding braving the crazy cold temperatures and icy roads here is a fun meal that uses sweet potatoes to tell your body how much you love it!

Plus, it smells amazing when cooking(seriously!)and is so colorful it will melt any cabin fever blues! 🙂 (Groundhog Phil didn’t see his shadow today so we won’t be cooped up for too much longer… hopefully!) I found this sweet potato-lentil stew recipe in Alicia Silverstone’s cookbook but also added my own little Hollyized flair. The most involved part of this recipe is chopping all the veggies, which wasn’t a biggie. Enjoy!

Need:
.5 large onion
.25 cup olive oil
2 small tomatoes
2 sweet potatoes
1 bundle kale
7 cups (1.75 cartons) vegetable broth
1 cup lentils (dry beans)
1.5 teaspoons turmeric
1 teaspoon cumin
1 teaspoon ground coriander
.5 teaspoon ground cinnamon
.5 cayenne pepper

Hollyized Steps:

First peel the sweet potatoes and then chop all veggies to make the cooking go quicker.



Then add the oil to a large pot and allow it to get hot on medium heat. Next add the onions, stirring until the onions get soft.

After about three minutes, add in the tomatoes and then all the spices. It will start smelling FABULOUS!

Then add in the broth, sweet potatoes, lentils and kale. Stir all ingredients and bring to boil on medium heat. Look at how fun this is starting to look! 🙂



Once the soup boils, turn heat to low and cover. Let the soup simmer for about 45 minutes.

Serve the soup while listening to some James Taylor and SMILE! Isn’t it SO colorful?!?! From the way this smells, looks and tastes, you will have warm fuzzies all day! Plus, this is amazing for your health… to help negate all the cupcakes you may or may not have eaten while being cooped up! (Oops!) 🙂
