Sometimes the best recipes are serendipitous inventions. This is definitely one of them. Last week I couldn’t decide what I wanted for dinner and got caught up in a Hallmark Christmas movie (priorities). I was craving comfort food to feel extra cozy, but didn’t want to leave my house to get dinner because it was cold and rainy outside.  I turned to the contents of my fridge, freezer, and pantry, and created this cauliflower mac and cheese with shrimp and veggies dish!   

It was so delicious and was ready in less than 10 minutes. (You can’t beat that after a long day at the office!) I will certainly put this into my regular rotation.

Since this was a strike of culinary genius, I didn’t take my typical step-by-step photos, but you can follow along and will not be disappointed!  

Need:

1 pound shrimp 

1 packet white cheese powder (You can either take this from a box of mac & cheese that you already have or you can find this in the pasta aisle of your grocery store near the parmesan cheese and sun-dried tomatoes)

1 bag frozen cauliflower

.5 zucchini 

.5 cup spinach 

1 tablespoon almond milk 

Red chili pepper flakes to your liking 

Hollyized Steps:

Peel and devein your shrimp first. Then cut the zucchini into thin half slices and finely chop the spinach and have the chopped veggies waiting on the cutting board.

Put a little EVOO in a large skillet and add the raw shrimp and zucchini slices. While the shrimp and zucchini cook on the stove, put the frozen cauliflower rice in the microwave for about 5 minutes (as directed) so that it steams. 

Keep turning the shrimp until they are pink and done. This should be about 6 minutes. Remove your skillet from the heat. Then add the bag of cauliflower rice, chopped spinach, powder white cheese packet, and 1 tablespoon of almond milk. Stir all the contents of your skillet until the powder cheese is fully dissolved and all the veggies and shrimp are coated with the cheese sauce. 

Lastly, sprinkle your skillet with red chili pepper flakes to add a little heat, and serve this meal in a bowl! You have an easy healthy dinner for a chilly winter night! Enjoy!
