Earlier this week, I dinnered with my dear college friend Mrs. H and saw a sign at a neighboring posh eatery advertising a tomato and watermelon salad. That sounded so good to me and without seeing or tasting the dish, I have been determined to make a Hollyized version of it! I know it sounds silly but I have spent a majority of the week thinking of how I could make mine and how it could be served. (Yes, how nerdy!)
Well… just call me a culinary genius! This turned out AMAZING! And, (BONUS!) you can serve three different ways! It is fresh and juicy and feels like summer exploded in your mouth when you bite into it! Wait no more because I give you my Hollyized Trice as Nice Tomato and Watermelon Salad!
Need:
1 container fresh watermelon chunks (buying it chopped saves time and you can use leftovers as a snack)
10 cherry tomatoes
3 tablespoons fresh feta cheese
1 tablespoon raspberry vinaigrette salad dressing
.25 can black beans, rinsed and drained
1 pinch salt
Hollyized Steps:
Gather all ingredients to make this easy dish!
Next, slice each cherry tomato into four or five slices. Then pull approximately 10-12 watermelon chunks and slice into fives.
Combine the sliced cherry tomatoes and watermelon into a small mixing bowl.
Add in the tablespoon of dressing and the pinch of salt. The dressing helps bring out the subtle sweetness of the watermelon and tomatoes.
Then add in the feta and rinsed black beans for some protein. The beans should be rinsed to help remove all the gases — you’ll know they are all gone when the little white bubbles stop foaming.
Gently combine all ingredients in the mixing bowl. I used my salad tossers to simplify the stirring and keep my watermelon and tomato slices in tact. Doesn’t it look so colorful and delicious?!!?
Finally decide which of the three ways you want to serve your tasty dish! Serve in a bowl as a summer salad itself, use as a garnish to top a bagged salad, or finely chop the watermelon and tomato and serve on top of toasted french bread like a summer bruscetta!
