As you can see, I fell back into the world of restaurants this last week! DUN DUNN DUNNN!! (Although, to my credit, I did make enchiladas from scratch on Tuesday for a small dinner party I hosted but just forgot to take pictures.) But yes, I slipped. Luckily, I’ve fallen and CAN get up! Fear not! πŸ™‚

Most of you are familiar with my declared National Hollydays and Tuesdays have become Tex-Mex Tuesdays! A mini fiesta to make an ordinarily boring day more exciting! AKA excuse to eat fatty yet delish food!(Pinata not included.) Tonight’s Tex-Mex Tuesday table was set with Turkey Tacos! (Alliteration much?!)

Need:

.5 pounds ground turkey (beef or chicken also works)
2 tablespoons Mexican Spices (Yes, this is what it’s called and is found in the spice section.)
1 tablespoon garlic powder
.25 onion
2 tablespoons butter
1 tablespoon EVOO (Adding a bit of my Italian flair!)
1 cup baby spinach
Whole wheat tortillas
Spring mix salad
Monterrey jack cheese

Hollyized Steps:

Chop onions into small pieces. Spray a pan with EVOO and cook for 3 minutes on medium/high.

Add your ground meat to the onions. Then top with Mexican spices and add EVOO.

Mix with a spatula in the pan and cover for 2 minutes. Then add butter.

Cover and cook on low for 6 minutes.

Chop baby spinach into thin strips and then add into the pan.

Cover again and cook on low for three to four minutes. Make sure you continue to stir your meat so it gets evenly cooked. Then heat your tortillas for 30 seconds in the microwave. Plating: add spring mix salad to the tortillas, then fill with meat and top with cheese! TADA! Your cena (dinner en Espanol) is served!
